Slow Cooker Santa Fe Chicken

One of the best food blogs I follow is 
Gina's Skinny Recipes.
Every week she posts a new recipe (I know, she's amazing!) and the best part is that ALL of her recipes are healthy and figure friendly. Somehow she manages to still make food taste yummy, just without all the fat and calories. 

This week's recipe is one I got from her...

Slow Cooker Santa Fe Chicken
Ingredients:
3 boneless, skinless chicken breasts (about 24oz)
1 can corn
1 can diced tomatoes
1 can black beans
1 can fat free chicken broth
1/4 cup chopped fresh cilantro
1 tsp onion powder
1 tsp garlic powder
1 tsp chili powder
1 tsp cumin
salt & pepper to taste

Directions:
1. Combine all ingredients except chicken in your crock pot. 
2. Season chicken breasts with salt and pepper and lay on top.
3. Cook on low for 10 hours or on high for 6 hours.
4. About 30 minutes before serving, remove chicken and shred; return chicken to crockpot and stir in.
5. Adjust salt and seasoning if necessary, serve over rice. Top with shredded cheese and scallions.
